Faux Fruit Cobbler

Faux peach cobbler with cinnamon and granola:
Aaand faux strawberry cobbler with chocolate chips and graham cracker pieces.

Thanks to summertime we have an abundance of lovely fresh fruit at great prices at our local grocery stores. Me being the trying-to-eat-healthier-desserts person, I have been looking for different ways to up the nutritional value for my sweet teeth (since you can never have just one sweet "tooth").

The result...Faux Fruit Cobbler! Much healthier and still oh-so-delicious.

I just finished eating a bowl of it, but I will post a picture the next time I make some and remember to take a pic - promise :)

Ingredients:
  • 1 piece of your favorite ripe stone fruit (peach, nectarine, pluot, whatever you have handy and want to eat :) ), cut into large chunks with the pit removed
  • Cinnamon
  • 1-2 tbsp. granola or crushed up graham crackers, depending on your preference. Any cookie crushed up would be lovely as well.
  • Optional: 2 tbsp. chocolate chips (I forgot these tonight, but they get all melty and gooey and are just fabulous. Do it! :) )

Directions:
  • Put your fruit into a bowl and add cinnamon to taste. Stir the fruit around so it all gets coated with cinnamon.
  • Add your granola/graham cracker/cookie pieces (and chocolate chips if you wish) on top.
  • Microwave for 30 seconds or until the chocolate is just starting to melt.
  • Mix, eat with a spoon and don't forget to take a picture for your blog :)

Red Velvet Cake Brownies

You know it's been a while since you blogged when you upload pictures from your camera and can't remember what recipes you used for them :/ Oops! It's been a busy week in our house and the cooking has been a bit scattered = we've eaten lots of leftovers this week :)
Hubby and I are going to a Labor Day picnic at a parishioner's house this afternoon, and I didn't want to arrive empty handed. I was quite tired last night, so I wanted to make something that required very little brain power. These were super easy - just mix everything together, dump into the pan, and bake. Thanks to Julie for the inspiration!
Red Velvet Cake Brownies - recipe from Peanut Butter Fingers
Ingredients:
  • 1 egg
  • 3/4 cup melted butter
  • 1/2 cup water
  • 1 box red velvet cake mix
  • 1 cup chocolate chips (Julie says they're optional - I say go big or go home :) )
  • cream cheese frosting (I didn't feel like frosting them, but go for it if you wish. They're just as tasty without.)
Directions: Mix the first three ingredients before stirring in the red velvet cake mix and folding in the chocolate chips. Pour the batter into a baking pan sprayed with cooking spray. Bake at 325 degrees for 25 – 30 minutes. Stick a toothpick in the middle of the brownies to test for doneness - they're ready when the toothpick comes out clean. Allow to cool before frosting, if desired.
That is some serious crumb action there. Come to mama.

(Yes, it is awkward to take pictures of yourself in your pajamas.) These are pink sleep shorts (I call them boxers because, well, they look like boxers! lol) from Target and I have had them forever and a day. Great when it's humid out!
