I love garlic. I used to relish eating it when I was younger because I thought it would keep the vampires away. Har har. Never mind that it stinks up your breath - it tastes delicious :)
You can imagine my excitement when Garlic Gold offered to send me some "samples" in the mail in exchange for reviewing and posting their products on my OpenSky site. Garlic Gold offers certified organic, handmade, sustainable products and everything is grown on their ranch in California. Hooray for responsible production! :)
Anywho, I certainly wasn't expecting this monster package in the mail. I even had to sign for it with the UPS guy - that's when you know there's goodies inside :)

Since I had a plethora of potatoes (and apparently adore alliteration in my blog posts) lying around, I looked up a recipe on Garlic Gold's website for inspiration. They have a great assortment of recipes using their products, and when I found this one I couldn't resist. Cheesy, gooey potatoes with loads of garlic flavor? Sign me up!
Here's what I used - my only substitution in the recipe was Greek yogurt for sour cream. It turned out a-ok :)
First up: rub-a-dub-dub Mr. Tater in an olive oil bath.
Oooh, shiny.
Poke your taters all over with a fork, then bake in the oven until they're nice and wrinkly.
Sauté your chopped onions...
And after the taters have cooled a bit, slice them open lengthwise.
Scoop out the insides.
Mash those innards up!
Add your toppings and mash mash mash!
Mash in the onions.
Don't forget the nuggets!
Fill your potato skins with the mixture and top with salt and pepper. Bake until the tops are nice and crispy.
Et voila! Gooey goodness.
Please refrain from licking your computer screen. These potatoes were the stuff dreams are made of: warm, gooey, cheesy, and just enough garlic flavor. I love how the potato skins and the top of the mixture got super crunchy too. Hubby loved 'em, too, so this is a winner-winner-yummy-dinner in my book :)

Hi Lauren! I'd use the lemon vinaigrette possibly marinate some shrimp, I think. It all sounds so tasty! The possibilities are endless. It's so "early" and I'm getting garlic envy right now. However, I guess that'll change tonight as I'm making a chicken & shrimp stir fry with brown rice for dinner :-) Thanks so much for sharing this Garlic Gold (I've never heard of it!) and the droolworthy potato pictures and recipe :-)

ReplyDeleteHey Lauren! I just got those nuggets for Christmas from my mom! They are so good! I would love to try the vinaigrette! I would make the Garlic Cold Lemon and Herb Spaghetti - however I could make it with spaghetti squash since it has been sitting on my counter for a week!
